Hi, in india we grind the chickpeas with onion, green chilies finely chopped and ginger garlic paste...salt to taste. Add a little yogurt and set aside for 20 minutes. You'll have a fluffy omelette 🍳✨

been making this all week so far and thought it was only fair to say thanks! i can't stand eggs so to me is better than an egg omelet. I just added shredded garlic, cooked veggie sausage chopped up tiny, and a bit of salt, pepper, and turmeric. I think if you let them sit they taste really good too.

Well... I made it with canned chickpeas and LOVED it. 😀 I stir fried a bag of frozen onions and peppers in a cast iron skillet first and set that aside. Made the omelette recipe and added some nutritional yeast as well as onion powder, garlic powder and white pepper. Then added the cooked veggies. It sure DOES taste VERY different from omelette made with chickpea flour. Very delicious! And you definitely have to be patient with these. Low heat and give it time. I burned the first 3 because my heat was too high. My stove goes as high as 7 and these cooked best on setting 2 for me with a non stick pan (give it a good 5min pre-heat).

Well, since I came to live in India, I discovered the surprising magic of grinding soaked (uncooked) beans, chickpea and lentilles and making all kinds of omelettes, patties and cutlets by incorporating vegetables and spices in the mixture. The uncooked beans and dals have glutenous quality that makes the patties or vegan omelettes hold together without any eggs. I expect that using cooked chickpeas, the texture and the taste of your omelette will not be the same and often they may fall apart for the reason I explained above. Besides, soaking chickpeas overnight is very easy, as you won't be cooking them anyway so takes no work.

Just found you on YT after seeing your video on gooey non dairy cheese and that started my venture into your site of wondeful looking recipes. I love chick peas so I figured it would be a good one to start with. Wow this was so good, & it really worked for me as an awesome EGG Omelette substitution. FYI. I had to play with the amount of tapioca starch used due to I think, using canned beans, making it a bit more runny on the first try. I think next time I will not add as much water when using canned beans to see if I can get them to turn out like yours. :) Onions & Bell Peppers were my add in veggies. Thanks for the recipe.
