This Zucchini White Parmigiana recipe is so simple, but the flavors are absolutely amazing. I start with thinly sliced zucchini, then top it with my homemade basil pesto and a sprinkle of mozzarella and Parmesan cheese. Then it bakes until the cheese is melted and starting to brown. The basil pesto gives it such a fresh herby flavor that complements the zucchini and cheese perfectly. • Ingredients for a Non-Stick Square Baking Tray, 23 cm x 23 cm x 4 cm (9 inch baking tray amzn.to/3UUzzNG):
• 4 medium-sized zucchini
• Extra virgin olive oil
• Salt to taste
• 250 g basil pesto (ca 1 cup), store-bought (I used Barilla Pesto amzn.to/3KBm6Wx) or homemade (watch this video for homemade basil pesto: • The secrets to perfect... )
• 300 g shredded Mozzarella (10½ oz)
• 120 g grated Parmesan cheese (4¼ oz)

INSTRUCTIONS🔻
Preheat the oven to 180 °C (ca 356 °F) and line a baking pan with parchment paper. Cut zucchini into thin rounds and place half in the pan. Season with oil and salt, then add the remaining zucchini and season. Bake until soft and golden brown. Remove zucchini and parchment. Spread pesto on the pan bottom, then zucchini, mozzarella, and 50 g (ca 2 oz) Parmesan. Repeat zucchini, pesto, mozzarella and Parmesan, drizzle with olive oil to taste, then bake 10-15 minutes until cheese is browned. Let cool 10 minutes before serving.
