Maybe she doesn't know their viewers' English level since there are people with different levels on ESL channels, so she's assuming that a considerable portion of this group is consisted of beginners, that's why she's talking that way, with detailed examples, like we were babies. In my opinion, it's very thoughtful and considerate of her. After all, she's a teacher and is just being inclusive and showing how didactic she is in her classes/ explanations, which is a great quality in a teacher.
