This is how I cook my Igado recipe. My take on my favorite Ilocano dish is easy and flavorful. For this recipe, I used Pork belly and Pork Liver. You can use pork tenderloin, pork shoulder, pork butt, pork heart, and kidney.
IGADO INGREDIENTS:
1.34 lb Pork Belly
Marinate Pork Belly in 2 tbsp Calamansi juice, 1/2 tsp Ground black pepper, and 1/4 C Soy sauce.
1.15 lb Pork Liver
Marinate Pork Liver in 2 tbsp Soy sauce, 1/2 C White Soda, and 1/2 tsp Ground black pepper.
2 1/2-inch Ginger, crushed
1 medium-sized Red Onion
4 cloves Garlic
2 Bay leaves
1 1/2 C Potatoes
1 C Carrots
1 can Garbanzo beans, 15.5 oz (439 g)
1 Red Bell pepper
3 tbsp Tomato paste
2 tbsp Vingear
1 tbsp Calamnsi juice
1 tsp Salt, to taste
1/4 tsp Ground black pepper
1/4 C White Soda
1/2 C Water
**NOTE**
COOKING is all about your taste. Adjust accordingly.
