You cannot delete a cookie as it doesn't reside in the browser, but a cookie is stored on the user's computer which a website doesn't have access to (for obvious reasons) so you create a cookie that instructs the browser to delete it and that is done by giving the cookie a max age of 0 just as the video described, "you give the cookie and immediately ask it to delete itself".

Can you expand more on using form instead of Remix's Form? Seems a bit strange to me, to not use Remix's components in a Remix tutorial. Is it specifically for this use case of a form that is only a logout button?

I think their argument, the last time I saw it, was that it doesn't protect very old browsers (think IE and Firefox 20, and so on). It's such a small market share, and is generally not supported anyway on the app in question, that most people doesn't consider these browsers. The target audience is small enough that it's also less likely to have exploits in the wild trying to catch them.

what would be great is if this carried over to react router. infuriatingly, it does not. trying to use /logout as a 'resource' route and it shits the bed with a localhost not found. return a navigate component even a redirect in a useEffect in the logout page to force the fucking thing to redirect to login and the page goes to login, but the url stays at logout. should of been a backend dev....
