As I grow older, I find myself enjoying fish more than meat, and one of my favourite ways with fish is to deep-fry, then braise in soy sauce. Deep-frying a fish that has been dusted with cornstarch before “braising” is not about getting crispy fish - it is a technique that allows the sauce to cling onto the fish. When I first watched Devagi Sanmugam and Audra Morrice prepare this on IG Live, I could not wait to try it for myself because it marries that technique with my love for kecap manis! What I love about this dish is that you can taste the influences from different cuisines in Singapore. If you use fish steaks with the bone running through or whole fish, you can skip the cornstarch, but if you’re using boneless fillets of delicate fish like me, cornstarch really helps prevents the fish from breaking apart in the oil or braising.
Indian-Style Ikan kicap
Serves 4
(Recipe adapted from Devagi Sanmugam & Audra Morrice’s IG Live)
For the fish:
450g fish fillets, cut into pieces (or even better, use steaks of fish with bone running through or whole fish)
2 tsp cornstarch
2 tsp turmeric powder
1 tsp salt
Oil for deep-frying
1 tsp urad dal
1 tsp fennel seeds
150g sliced onions
1 green chilli, sliced
2 chilli padi, sliced
20g peeled garlic, chopped
20g peeled ginger, finely chopped
3 sprigs curry leaves
300g water
2 tablespoons kecap manis
1 tablespoon dark soy sauce
Salt to taste
65g spring onions, cut into 2” pieces
1. Rub fish with cornstarch, turmeric, and salt and deep fry on high heat until golden but not cooked through.
2. Pour out all but 4 tablespoons of the oil leftover from frying the fish.
3. Fry urad dal until golden brown, before adding fennel seeds. fry until aromatic.
4. Add onions, chillies, garlic, ginger, and curry leaves. Fry until the onions soften.
5. Add the water, kecap manis and salt. Bring to a boil.
6. Add the fried fish and cook on medium heat, until the gravy has slightly thickened.
7. Add the spring onions and cover. Cook 1-2 minutes or until the spring onions have softened.
8. Serve with hot steaming rice.
