Indian Sweet and Savoury PAANCAKES - Paan flavoured dosas
Ingredients
For the dosa batter
3 cups rice
1 cup urad dal
1/4 cup chana dal
1 tsp methi daana
( THE QUANTITY MENTIONED FOR THE PAAN PASTE BELOW IS FOR 1.5 CUPS OF DOSA BATTER , SEPARATED FROM THE BATTER PREPARED.YOU CAN ADJUST THE QUANTITIES ACCORDINGLY)
Ingredients for the paste
Paan leaves / betel leaves - 4 to 5 medium sized, chopped
Gulkand/ rose petal jam - 1 tbsp
Saunf/ fennel seeds - 1/2 tsp
Cardamom powder - 1/4 tsp
Desiccated coconut - 1 tbsp
Dosa batter - 2 to 3 tbsps approx.
Green food colour - 1/2 tsp
For the dosa filling
Grated Nariyal
Tutti frooti
Gulkand
Saunf
( Ingredients and their quantity for the filling is as per your choice)
Method
• Rinse and soak the dals and rice separately for at least 5 hours.
• Grind them to a fine paste.
• Mix the pastes and leave it to ferment for a day in a warm place.
• Add some salt and mix well.
• In the mixer jar put all the ingredients of the paan paste and grind them to a smooth paste.
• Add the paste to 1.5 cups of dosa batter and mix well.
• Heat a seasoned tawa or a griddle and grease it with some oil.
• Pour 1/4 cup of paan flavoured dosa batter onto it and spread as shown in the video.
• Cook for about 2 minutes from both the sides, pouring a little oil in the centre as well as the edges.
• Once done, remove it from the griddle
• Garnish it with some gulkand, desiccated coconut and tutti fruti .
• Garnishing is completely optional.
• Paan dosas taste awesome without the garnishing as well.
