This recipe is from Indonesia and is called Pepes Cassava Leaves or Pepes Daun Singkong. Inspired by Nikmatul Rosidah Channel (thank you!), which has been slightly modified to follow my family's tastes. It's very good to have it with white rice, healthy and satisfying. I hope you enjoy this recipe!
Indonesian Pepes Cassava Leaves / Pepes Daun Singkong
500 gr Cassava Leaves, boil and slice
500 gr Tofu
300 gr Tempeh
1 Red Chili
3 Tomatoes
2 Eggs
Hot Chili (optional)
Blend into paste:
3 Garlic
1 Small Onion
80 gr Shallots
7 Candlenuts
5 Lime Leaves
For wraping:
-Banana Leaves, make sure have cleaned before using
-Toothpick for securing the wrap
*Pepes is an Indonesian cooking method using banana leaves as food wrappings. The banana-leaf package containing food is secured with lidi seumat (a small nail made from the central ribs of coconut leaves), and then steamed or grilled on charcoal.
