The Writers are able to slow the pace of this film down with this scene to give us the chance to breathe, also to continue to further the arc of Joy within the film. And the most underrated thing is the amount of setup that this scene accomplishes for the rest of the film. The storytellers craft a brilliant scene that helps with their pacing and also manages to make us even more invested in these characters.
