I started doing this last year and I’m very happy with the result. I still have several jars and they have not discolored or lost their flavor. These are also great for thickening soups or stews.

TheOldFarmersWife: thank you very much for your tutorial. I’m wondering if I can do this with yams, sweet potatoes, turn up, personal, and carrot; it’s been a while since you did this video, so I’m wondering if you’ve experimented with other vegetables. And if you have, which ones were successful, and what’s your technique? I sure enjoyed this. :-) I almost forgot. By way of giving back: I like to make gravy, and then take the leftover gravy to hydrate and powder it for when I’m out in the woods and want to make a satisfying feed quickly. It works the same way as your technique for potatoes, and it works really well if you drain the excess fat off. (Otherwise, if it’s stored for very long it could go rancid because of the fat.). It even reconstitutes just about as quickly as the potatoes do. :)

If you want to avoid having to add potato water to get a smooth mash, use a potato ricer. When I want mashed potatoes I boil my potatoes with the skin on (more flavour) and push them through the ricer. The skins stay inside the ricer and is easily fished out. It saves time because you don’t have to peel them AND if you think of it, it saves on drying time because you don’t need to add extra liquid. I found ricing is faster than putting them through a mixer.

I just love watching you! Potatoes and onions are two of my favorite things in life. My husband served in the Navy and hated their instant mashed potatoes so much that he will not eat them unless they are lumpy. After many years of cooking to please him, the lumps seem normal to me now. I tried once to make onion mashed potatoes and they tasted good to me, but the texture in the potatoes was strange. I used finely chopped onions but after watching this, I think I will try onion powder next time. Maybe it will work to give me onion potatoes. I love garlic potatoes too! I love a potato no matter how it is cooked. Have a wonderful day Barb, filled with blessings...

Thank you. This is what I had in mind, dehydrating just the mashed potatoes with nothing else added. I've dehydrated potato slices and small southern style hash brown cubes with good results so I'm going to try this. I will grind it in a finer powder by sifting it each time and regrinding the larger pieces until they are all gone. Another trick I've seen used with boiled sweet potatoes is to roll them out thin with a rolling pin between two pieces of wax paper to make them thin and uniform so they dehydrate better. That will work well if your dehydrator trays are square. I'll try it in my round trays by cutting a hole in the center with a cup and use a fruit tray as a guide to make them round and fit properly.

@@theoldfarmerswife5915 I salivated over freeze dryers for 6 yrs before taking the plunge. I picked it up on the front end of the virus. Had to wait an extra few weeks. It is my present to celebrate Mr. Horticulture and Homes second retirement. I'm too tight to buy freeze dried meat. Too expensive! Great for camping and quick meals though. I was going to pick up a berkey for at the farm and they are sold out! I have similar filters for a real emergency so will have to wait for a Berkey another time. Mr. H and H's brother is buying a canner this season. The big ones are still available but smaller ones are sold out. Have you seen how much people are getting for canning lids??? I could make a small fortune if I sold mine and used just my tattlers instead. What about veggie seeds too? I still have not found cauliflower seed online or off. I seeded many fall garden crops this week. Maybe you can use your channel funds to invest in a freeze dryer. I'm sure it would be ok with your viewers. Ask them.

Leave the dried potato in the zip lock bag, and press it over a few times with a rolling pin. You know, like what seems to happen with your favourite seasoned commercial chips after "someone" else helps themselves to them. Make sure the zip lock bag is closed properly of course. I used to do this same method when making my own breadcrumbs or biscuit base for cheesecake. Just pop them into a bag, expel most of the air, seal it up and use the rolling pin over until everything is down to the size desired.
