Here is the recipe for our instant pot, beef nilaga!
2 Pounds beef cut into 1 inch pieces
6 cups beef stock
1/2 head of cabbage, quartered
1 tablespoon black peppercorns
4 heads baby bok choy, cleaned and quartered
2 potatoes, peeled and cut into 1 inch pieces
1 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon olive oil
Set instant pot to saute. When indicator reads "hot" add beef, seer on all sides until beef is browned.
Add 6 cups of beef stock, bring to a boil and press the cancel button on the IP to cancel cooking on IP. Add Fish sauce, peppercorns, and Soy sauce to the lP and put the lid on, move safety pin to sealing and press manual button, adjust time to 25 minutes.
When the time is up, manually release the pressure by moving the safety pin from sealing to venting. Safely remove the lid from the IP by opening away from you. Please taste your broth, add more fish sauce or soy sauce if desired.
Once again press the cancel function on IP, and press the saute function. Once the broth comes to a boil, add the cabbage, bok choy and potatoes, cook until the potatoes are fork tender (about 10 minutes)

So what is Nilaga Baka? Nilaga means boiled, and Baka means Cow in Tagalog. This is a Filipino soup and according to the old and reliable wikipedia, It's a beef stew with potatoes and cabbage, and the broth has been seasoned by onions and peppercorns, the meat of choice is usually brisket or chuck .
In my experience so far, this is fairly accurate, however, I've never seen it in stew form. Also the broth is usually clear and almost flavorless and weak.
My recipe is different, because were going to use stock, which will give out broth a deeper color, but more importantly a deeper flavor.
