This dish is very delicious. I have made it in a regular pot too (link below). Cooking it in the instant pot make it so easy and quick.
Ingredients:
Filling Ingredients:
2 cups of rice washed three times and drain
2-3 cups of ground beef slightly greasy
1-2 tablespoons of minced garlic
1 tablespoon salt or to taste
1 teaspoon black pepper
1-1 1/2 tablespoon of mixed spices
1/4 cup of olive oil
Other required ingredients :
2 rolls of canned grape leaves
6-10 small Zucchini
Big meat stew with bone or without as desired, optional
1/4 cup of lemon juice
Or 1/2 teaspoon lemon salt
1 to 1 1/2 cups of water1-2 Tbsp. pomegranate molasses
Steps
-Wash grape leaves well and let them dry
-Wash the zucchini , cut the strong, large head and core it
-Wash the rice several times until the water is clear, then strain well
-Add ground meat, garlic, salt and spices and mix well
-Add oil and mix well
-Stuff the zucchini, leaving a distance of one cm from the top
-Place the grape leaves over a plate with the rough side up. Put about a tablespoon of the previously prepared filling. Fold the lower ends to the top, then fold the edges from the sides inwards and roll tightly. Do stuff all in the same way.
-Put a small amount of oil at the bottom of a 6qt instant pot inner pot, then put the meat. In case you don't use meat you can put some potato slices or some grape leaves
-Start with the stuffed zucchini, then arrange the stuffed grape leaves
-Put lemon juice or lemon salt(citric acid).
-Add water.
-Make sure the plastic sealing ring is in place and the handle is in the sealing position.
-Cove the lid and pressure cook for 30 minutes, and at the end of the time wait 15 to 25 minutes, depending on the type of grape leaves, the size of the zucchini and the size of the meat pieces
-Keep the water in a bowl and flip the pot over a serving dish or scoop it out.
