This soup is highly customizable as you can change substitute the meats and vegetables according to your preference. I love it with these spicy hot Italian sausages, but you can use any type of raw sausage you like - pork, chicken, beef, mixed. You could also use ground meats instead of seasoned sausages.

Today’s Ingredients:
15.5 oz bag Hurst’s Garlic and Herb Lentils (with seasoning packet), sorted and rinsed
1 TB butter
1 TB extra virgin olive oil
1 lb Italian sausage, casings removed (hot or mild - your choice)
1 cup each, chopped: onion, carrot, celery
6 cloves garlic, minced
2 bay leaves
½ tsp red pepper flakes (optional)
14.5 oz can diced tomatoes with juice (fire roasted if you have it!)
6 cups chicken broth (Better-than-Bouillon in the video)
1 TB red wine vinegar
2 cups celery leaves (or parsley, kale, or napa cabbage)
Instructions:
1. Sort the lentils to remove any debris or bad lentils and rinse well (no need to soak). Reserve the seasoning packet for later in the recipe.
2. Preheat the Instant Pot on the highest sauté setting and add the butter and oil when the display reads “HOT.” Then add the Italian sausage and cook until well-browned all over. Stir every few minutes and use a spoon/spatula to break up the sausage as it cooks. This step should take about 7-9 minutes.
3. Add the chopped onion, carrots, and celery. Continue to cook, stirring every few minutes, until the veggies are just softened. This step should take another 5-7 minutes.
4. Add the seasoning packet, garlic, bay leaves, and red pepper flakes. Cook, stirring constantly, for just another minute - no longer than one minute to avoid scorching the garlic.
5. Add the can of diced tomatoes with their juice and deglaze the bottom of the pot. Make sure to scrape up any stuck-on bits from the bottom to avoid getting a “BURN” warning later.
6. Add the rinsed lentils and chicken broth and stir to evenly distribute all ingredients in the pot.
7. Lock and seal the lid and cook on high for 10 minutes followed by a 15 minute natural release. Then release any remaining pressure before reopening the lid.
8. Stir in the red wine vinegar and celery leaves (or parsley, kale, napa cabbage). Taste and adjust seasoning as needed.
