Bison is by far my favorite kind of jerky! Highly recommend, it tastes very similar to beef but richer (not gamey though). I just started 4 batches of it: one standard pepper (basically your recipe + liquid smoke), one with miso-honey-ginger-garlic-soy-sauce, one with those things but also with Worcestershire and gochujang and red pepper flakes, and another one that's pretty much the standard one but with chiltepin and cumin and coriander for a Mexican twist. I'll update this when I try them! Also I hope my deep-dive pricing comment on the last video was a bit of an inspiration for this 🙂 So glad you made this and used grams!

I add dark soy sauce to my recipe and marinate it in a freezer bag for 2 to 3 days. When my marinating process is done, I am left with no marinating liquid in the bag.

I have made my own jerky for nearly 40 years now...no jerky is better than your own jerky once you know what you are doing. I suggest using london broil and buy when it is on sale for $1.99/pound.

Man... food costs so little in the USA compared to rural small town Central British Columbia, eh? Even my 20 lb bag of 'Competition Blend Pellets' costs over $30 CAD. 24 beer costs over $40 CAD. A 1/5 of Vodka costs aboot $24 CAD etc. I don't know how much jerky costs here, probably a lot of Loonies for a little cow.. l never buy jerky because it costs too much for me to even look at the price VS amount of jerky you get.

I'd say what's worth is up to the individual. We have a few jerky stores that have incredible jerky. Those are definitely worth it. Making my own is definitely worth. That big name brand gas station jerky on the other hand... to me. Not worth it at all.

Great video Ninja! Btw, it's actually super easy to pronounce "worcestershire sauce" correctly. It's just pronounced "Wuster", the "shire" bit isn't even pronounced. All Americans get it wrong. Stop trying to read out the word and just remember "wuster", it's "wuster sauce".

Pineapple juice, Soy, Apple cider vinegar, Salt, Worchester Sauce, Smoke. If I want sweet I also add tomato puree & honey. If I want spicy I add cayenne pepper. I marinate over night in the fridge. I poor the drained marinate into some ground beef and dry that as a thin sheet and cut it up after.

Do grilled brisket tacos (the best) 1.) Slice raw brisket thin 2.) Season with season all or lawrys 3.) Grill on high heat (watch for flare up's because of high fat content) 4.) Using a clever chop meat (because of toughness) 5.) Serve on grilled corn tortilla (chopped onion, cilantro, lime, and salsa opcional) Creamy green salsa (most people think it has avocado but its a lie) 1.) Grill 5 jalapenos 2 serranos 2 cloves of garlic and a 1/4 onion 2.) Once charred blend everything together 3.) Crucial step slowly drizzle canola oil while blending to emulsify (if oil seperates stop and remove excess oil and reblend) 4.) Add salt to taste (even though it has a lot of peppers it is not a very spicy salsa. Really creamy in texture)

You really love your worcestershire sauce, isn't it? And why all the dried ingredients? Nothing is better then jerky with little peninsulas of taste. A bit of garlic on one bite, a bite of thyme on the other. This recipe sounds to me like a umami bomb without any of that character. Please, stop to try to imitate Jack Links. Boring. And who else then fucking jack links told you to use such lean cuts? Picanha with all its fat is still the best for jerky. And believe me if i tell you i tried out all the cuts. The fat will taste like haven. Like there is no good ham without fat, there is no good jerky without fat.

@@SaltyTales My basic recipe is: -Aceto Balsamico(add sugar if you don't use aged stuff). It will add umami, sweetness and a bit of sourness. -Garlic, as fresh as possible, very finely cut. -Thyme, as fresh as possible. But be sure it's not overwhelming everything. -Roughly grinded mixed color pepper -Soy sauce The target is to make it not too salty, sweet, sour or herbal. Perfect balance. Ditch the idea of marinating the beef. Beef needs to taste like beef. The marinade needs to be a support, not everything. Marinade it, put it in the drier. wait. After it is dried, you should season it. Salt, chili, olive oil as a base.I also like curry powder on top.

I've been making jerky for years and it's absolutely worth it. The homemade flavor and texture make store-bought jerky look and taste disgusting (comparatively). Soy sauce and Worchester is really the key to a majority of the flavor. I try to limit my dry spices, otherwise, you get a cake/coating of just spice and it's kind of gross after a little while. Also note this, if you're making jerky for longevity; like camping, or hiking trips, you will want lean meat because the fat will go rancid. Here's the thing, jerky with fat (like top round, bottom round, rump roast) is insanely better tasting. Dehydrated, seasoned fat packs immense flavor. So, if you're making jerky to keep in the house and snacking, make fattier jerky, and keep it in your fridge. Excellent video and glad to see we have a lot of similarities. Oh, final note, you can also use a dehydrator, it works just as well.

@@Bigtexbbq Bottom and rump can be lean if you trim the fat. I particularly like the fat banding those cuts give. London broil is a very lean cut and I believe is most preferred for lean jerky. Sirloin, eye-round, and tenderloin would also be great options. I've not tried any red meat that was not tasty. Anything can be made into tasty jerky, even ground beef. As Salty Tales said, it's definitely a deep rabbit hole.

Hello! Your first jerky video made me start making beef jerky to sell to friends and family and people close by. By my own calculations I actually earn 4 times what I spend on all the ingredients combined. It's just missing how much it costs to make it in relation to the gas/energy. One thing tho is that it isn't as easy as I first thought but not too complicated either.

I see you used store bought item for the prices, but one thing that really gets the prices to go down is buying big bulks of product, like soy sauce from Sam's Club ir similar stores, with that you can take off a lot more per batch, and I know for a fact that big companies get things for much much cheaper than in any store. I do have one question tho, in your recipes you say you use 2 teaspons but on the grams and on the video I think you are using tablespoons. I also measured your same quantities and got the black pepper weighting less.

i do two bottles spicy hotsauce, and half bottle low sodium soy sauce and thats it, marinate 8 hrs, sprinkle with crushed red pepper if youd like, dry in on dehydrator for about 12-24 hrs. Tastes amazing. Adjust your flavors from there, make little changes if needed over time.

Ninja, I made beef jerky last month. I used 5 lbs. London broil with was on sale for $3.99 a lbs. (20 bucks worth) It yielded about 2 lbs. of jerky after smoking, about $10 a lbs. but it was so much better than the packaged stuff... oh, btw it's pronounced woo-stir-sheer

I would say it’s definitely worth it… it’s so much better quality if u make it from home… personally I don’t care if it costs a bit more to make as the size of it will be SOOO much better… none of that crap paying £8 or something like that for a bag that’s half empty and the pieces are often so small considering how much u pay for it… I really hate that… but maybe that for me is because where I live there isn’t many good places to buy it from Edit…. Ive never done it myself before but I do want to try it out… if it works I’ll be doing it a lot more in the future

Something you missed off is the cost of dehydration. I use an electric oven and 4 hours is a significant amount of kwh used, which brings the total closer to the Jack Link's price I'm sure. Another thing to bear in mind is that time is money. When you look at the amount of time you spend shopping, preparing and cooking, unless you know exactly what you are doing every time, do the savings add up to at least a minimum working wage?

I did set the price of the electricity consumed by the grill and the pellets. the time you put on making beef jerky is minimal and if you really try and add that to the final cost much much would you pay yourself for the job? That will change with each perception but looking at min wages how much would you put on it? 10/h 15/h?

jerky can last a long time, months even, dont be afraid, keep it in a jar, or ziplock bag, doesnt have to be in the fridge either, lasts months in jar in pantry

Thats not jerky. Jerky is dried meat. 180 means it's cooked. Let's call it steak bites. Don't go over 120-125°F if you want jerky.

I have been making beef jerky since I was a young boy. 1/2 teaspoon per pound of MSG does wonders for beef jerky. I also like to add dark brown sugar and use about double the amount of sugar that Ninja uses. The extra sugar doesnt make the jerky too sweet, it helps all of the other seasonings stick to the meat for extremely flavorful beef jerky. Everyone says its the best jerky they have ever had.

Here is my recipe for anyone who is interested. 8oz Worcestershire sauce 8oz soy sauce 1/2 teaspoon of MSG per lbs of beef 1 tablespoon smoked paprika, or to taste 2 tablespoon honey, or more to taste 4 teaspoons freshly ground black pepper 2 tablespoons crushed pepper flakes (to taste) 5 cloves of garlic (or more) 2 teaspoon onion powder 1-2 tablespoons dark brown sugar (to taste) 2 tsp of cayenne pepper 2 tsp of chili powder 4 pounds beef top round, thinly sliced Hot sauce or 1 whole habenero pepper sliced or mashed If you dont like your jerky spicy add only a teaspoon or two of crushed red pepper and omit the habenero/hot sauce. This jerky tends to be pretty spicy.

Awesome vid and awesome recipe. Sometime, when you get a chance, try out dry rub beef jerky. TRUST me. I got the recipe online that was just 3 parts each salt and pepper, 1 part each garlic, onion, cayenne, and paprika (I tweaked it to smoked paprika). Season the meat liberally all over and let it sit over night, then do your drying. Again, TRUST me on this! It's worth trying at least once. If you hate it, I will send you a box of meat from your favorite online store.

Beef prices went up big time. Choice Picanha at my local Publix and Thrifty was at $8 per lb in early June. Yesterday, both were at $10 per lb.

I buy a whole angus beef and have it processed. I pay $3.08/lb after processing. Support a local farmer and buy a beef, if you can’t buy a whole beef grab a bunch of neighbors and split the cost. From cheap ground beef to filets my total is still only $3.08/lb
