Banana has five main stages of ripeness:
Underripe, barely ripe, ripe, very ripe, overripe.
Most people will wait until the bananas are fully ripe before eating them. I will express my opinions in this video.
The starch contained in overripe bananas will be converted into fructose soon after eating, which will lead to the rise of blood sugar and the potential risk of diabetes.
But if it is eaten when the banana is relatively green, it is just when the banana is not ripe, in the stage of underripe and barely ripe.
The starch contained in bananas cannot be absorbed, and this type of starch is called resistant starch.
Unabsorbed starch becomes a food source for intestinal probiotics.
Non-digestible sugars such as resistant starch, dietary fiber, and oligosaccharides are fermented by beneficial bacteria such as lactobacilli and bifidobacteria in the colon, producing a series of nutrients such as short-chain fatty acids. One of these nutrients is butyrate, which can reduce intestinal inflammation and maintain intestinal health.
At the same time, it can reduce blood sugar and increase the body's sensitivity to insulin, thus reducing the risk of diabetes.
Therefore, when bananas are underripe, they contain higher resistant starch content.
However, the taste of underripe bananas is slightly bitter and lacks sweetness.
So, in my opinion, choosing the Barely Ripe stage is a better time to eat bananas.
