I've tried this cocktail and it's very good. Just a bit too sweet for me, I would dial back the orgeat to 7,5 ml (1/4 ounce) for the perfect ultimate Mai Tai. For rums I used Plantation OFTD, Smith & Cross, Plantation Original Dark and Havana 7. Pierre Ferrand Dry Curacao and Monin orgeat syrup.

I bought all four rums and matched the recipe. Nope. I found both Smith & Cross and Xaymaca to have a grapefruit pith aftertaste too bitter and unpleasant for me. Plantation OFTD is delicious but too strong for me. I’m still experimenting but Appleton 12 and Plantation Original Dark is my blend now. I also do a blend of Grand Marnier and Clement Creole Shrubb for the Orange liquor.

Hey Steve, thanks for the great recipe! I have 3 of the 4 rums you used and seeing the Australian prices made my jaw drop. When I was visiting family in the US, I was able to pick up the Plantation OFTD 1L bottle for $30USD. Didn't know at the time how good it was and picked it up because I've never seen it north of the border. The Xaymaca can be had for $38CAD and Smith and Cross for $48CAD. Just need to get my hands on the Appleton 12. My wallet would be closed if we had to pay those exorbitant prices.

My favourite Mai Tai is using 1 Oz plantation Guyana + 1oz Hampden overproof 8 years old + the usual Mai Tai recipe. I started to prefer grand marnier than other curacaos lately but that's just me. Nice video, going to try this mix as well since I own these bottles!! Edit: also have to add. Nice to have you back, nice having one more well read bartender out there spreading the recipes. I have three of four. I might pick up the Xaymaca and give this a go. Typically I go with a fifty fifty blend of Appleton Signature and Appleton 12. It's mainly just to cut down on the cost of a $70 bottle of rum.

I've subbed 8 for 12 in the ultimate Mai Tai blend, it was still pretty good. Btw, although 12 is preferable in the Ultimate Mai Tai blend, I almost prefer 8 in general. If you haven't tried 12 before, it's more oaky and less funky. It's almost reminiscent of a Barbados rum

Martin Cate worked with Denizen to create the perfect single rum blend! It’s called Denizen Merchants Reserve rum. 80% pot still Jamaican 20% Martinique. It’s delicious.😋 Martin Cate authored the Smugglers Cove book which is generally regarded as the tiki “bible”. Buy the book it’s awesome 😎

I was blown away by the OFTD - and I think it should stand for Oh Fudge Thats Deadly (Anyone fancy a funky Daiquiri?) - there is no missing that it is higher proof than Navy blend - So good that I needed to switch to other brands for daily drinkers to keep my intake in bounds. I'm curious about Kevin's blend, I always have a bottle of S&C on hand so definitely gonna give this one a whirl - thanks for the tip

In Finland, a mild and carbonated version of greyhound is available in all stores and is called Lonkero ($4,35/5.5% ABV). Maybe Paloma with London dry gin is closer to (exceeds) the Finnish version. Some cheaters sell fermented drink, which is technically grapefruit beer. My friend in the Philippines misses Lonkero, but I think it's better when "homemade" of gin.

If you're making a bunch of these, I sub out all the sugar/liqueurs (3 bottle touches) with equal parts orange oleo, demerara sugar, double strength earl grey tea, and toasted, homemade almond milk by weight with a touch of salt.

This recipe is absolutely delicious... Aside from that, tasting the rums separately are a real treat for the palette. Just wow. I had stopped drinking Mai Tais decades ago because most places sell you a sugary kool-aid drink that has almost no rum in it. Not to mention, crappy rum. I don't know how anyone who has any appreciation for high-end drinks would not like this....or how anyone could find the taste "overwhelming". These just need a beach and a bikini to complete. Thank you for sharing this.

Many European countries tax alcohol fairly low compared to say Canada or Australia. I know here in Canada half of the price of booze is the tax ( the calculation is actually a bit more complicated than that but it comes out to generally) plus there are many rules on who can import and sell booze.

This is sooo hard to believe! I just got home from my trip to netherlands and over there you can find the same O.F.T.D bottle for 25.95 euro exactly. In Poland where I live it's a bit more expensive aprox. 32-35 euro but still this is huge difference to how much you are paying. Feeling sad for you.

@@duanemead11 some of these are able to be seen on shelves. Plantation OFTD is probably the easiest to find, some select Dan Muprhy's and other bottleos will have Appleton 12. Smith & Cross has to be purchased from Nicks Wine Merchants online, and Xaymaca is an absolutely elusive beast. Check liquor mojo, Nicks wine merchants, and Camperdown Cellars for it

If anyone plans to recreate this make sure you shake the blend of rums in the bottle for a few seconds each time you use it as the alcohol layers can separate due to varying densities and percentages :)

This is untrue and shaking every time is unnecessary. The rums that were blended have relatively similar ABVs and they were mixed in a jug prior to bottling. Simply pouring from the bottle will also mix the rums together. They will not require much mixing to integrate. If you proof a spirit down from 80% to 40% with water, you will get a slight variation of ABV from the bottom of the container and the top of the container (potentially 5% difference), at least until they are mixed further and integrated. This is because 1 ingredient is 80% ABV whilst the other is 0% ABV. Mixing a 42% rum with a 55% rum, for example, will integrate easily and any minuscule difference will be indiscernible to anyone.

$130, $120, $90, $90 for the rums???? Crazy prices over there. Just bought Smith & Cross from Germany for 26 € which makes 38 AUD. Cancel my retirement plans of moving to Australia, I couldn't afford to live (drink) there...

This’s the original Mai Tai from (Trader Vic’s tiki party) recipe book which I bought from Trader Vic’s Bahrain: 2 cups crushed ice 1 large lime 2 ounces seventeen-year-old J. Wray & Nephew Jamaican rum 1/2 ounce French Garnier orgeat 1/2 ounce Holland DeKuyper orange curaçao 1/4 ounce simple syrup 1 sprig mint for garnish 1 fruit stick for garnish They have another recipe called Trader Vic’s Mai Tai, which has different runs and some little changes of ratios. And a third recipe called Trader Vic’s mix Mai Tai which utilizes a ready made Mai Tai mix sold by the brand world wide. In the last one you need 4 ounces of the ready made Trader Vic’s Mai Tai mix, 2 ounces TV authentic dark rum, 1/2 ounce lime juice, 2 cups crushed ice.

Will certainly give this a bash... My personal favorite Mai Tai recipe is one I make each year over the Christmas Period. Its a boozy one. 30ml Elements 8 30ml Red Leg 10ml Frangelico 15ml Freshly Squeezed Lemon Juice 20ml Ginger and Lemongrass Syrup (home-made) Shake, pour over ice, top with crushed ice and garnish with a Maraschino Cherry and spoon over a small amount of the Cherry Syrup

I've always found it quite pretentious to claim that certain rums are virtually coming from heaven and that there's nothing like them any decent rum will do the trick.. we're talking about a number of ingredients being mixed I'm sure no one would be able to tell the difference without looking at the labels ps I love mai tais

Different rums produce very different results in cocktails such as the Daiquiri or Mai Tai. I'd encourage you to compare this rum blend to "any decent rum" in a Mai Tai. You'll notice the difference. 🙂

This isn't even that funky, most of the funk from the smith and cross gets buried under the lime. IMO the Xaymaca does nothing here but dilute the other heavy hitters.

For Mai Tais I like using Clements Creole Shrub for the Orange Liqueur. I love Mai Tais
