The original recipe for the quinoa bark by Half Baked Harvest www.halfbakedharvest.com/supe...
To modify the recipe for low FODMAP purposes I used
1 + 3/4 cups soaked, rinsed and drained quinoa (Approx 1 cup dried)
2 Tbsp coconut oil
1/2 cup maple syrup
2 tsp vanilla extract in a low FODMAP glucose syrup base
2 tsp instant decaf coffee
1 tsp mixed spice
1 tsp ground cinnamon
1 pinch coarse sea salt
1 scant cup/100 g chopped pecans
1/4 cup ground flaxseed/linseed
220 grams vegan chocolate (I recommend you increase up to 360 grams)
The above recipe makes 12 low FODMAP portions.
