Today I tried making a slightly edgy chocolate tart for Valentine's Day ✨
We use a slightly larger 6-cut clasp, but I think you can create a more elegant look by using 8-cut or 10-cut clasps.

■ Tart dough
60g…butter
50g…Powder sugar
25g…egg
14g…cocoa powder
90g…Flour
① Cream the butter that has been brought to room temperature, add powdered sugar, and mix well.
② Add eggs to the above
③ Mix the cocoa powder and soft flour through a sieve, making sure to cover the entire dough. When the dough comes together, wrap it in plastic wrap and let it rest in the refrigerator for about an hour.
④Place the rested dough between plastic wrap and stretch it to a thickness of 3mm, then cut it out with a cm cercle.
⑤ Bake in a preheated oven at 170℃ for 15 to 18 minutes.
■Ganache for piping
160g…Couverture Sweet
90m…Fresh cream
15g…Starch syrup
① Melt the chocolate in a double boiler or in the microwave.
② Combine starch syrup and fresh cream and heat to around 60℃.
③Make raw chocolate by combining the above ingredients.
④Cool the combined chocolate to 25℃ and squeeze it into the tart dough to harden.
⑤To finish, melt a small amount of partaglace.
