Chicken & Spinach pasta
(Makes 8 Servings)
3.5 - 4 lbs Chicken Breasts
16oz dry Barilla Fettuccini
1 Tbsp Avocado Oil
½ lb fresh Spinach
3-4 Minced Garlic Cloves
½ diced Shallot
¼ cup Pine nuts
½ medium avocado
1 whole lemon juiced or 2 Tbsp
1 Cup pasta water (strained)
Salt and Pepper to taste
Clean all the chicken, then season and cook as desired Once done set aside.
Cook the pasta as per box instructions. Once done Strain the pasta but set aside 1 cup of the pasta water for the sauce.
In a pan over medium heat add the oil garlic and shallot. Allow these to become fragrant, then add the spinach. Cook this all together until the spinach just starts to become wilted. Once done place everything into a blender with the pine nuts, avocado, lemon juice, salt, pepper and pasta water. Blend this all together until you get a nice creamy texture.
