This is a soft and sweet egg cookie that i used to melt them in the mouth.
Ingredients

80g room temperature unsalted butter
Half cup of powdered sugar (120ml, 60g)
3 egg yolks
Vanilla extract 1 teaspoon 5g
Plain flour (cake flour) 2/3 cup (160ml, 90g)
Half a cup of almond flour (120ml, 60g)
150 degrees (300F) fan high-bake for 12 minutes
170 degrees (340F) fan high-bake for 10 minutes
