I bet it was amazing. I have made 3 things that he has featured on his channel and they turned out perfect thanks to his clear and easy instructions. You absolutely have to try making the Panna Cotta. It is one of the best desserts I have ever had.

He's funny, great personality, he even reminds me and my brothers and sisters of our oldest brother with his brand of humor. I even DVR'd one of his shows where some French chef made a pot roast, served on top of yellow grits.(polenta) I copied it exactly. Best pot roast ever, by far! Been making it that way now for years. Cooked low and slow in a 1/4 hotel pan. 5 hours in the oven. Better than a Dutch oven, better than a crockpot.

I will NEVER eat Carbonara with Cream, Bacon, or Mushroom ever again! I made a true authentic Carbonara with Pecorino, Guanciale, and Eggs... I prefer the authentic taste. I can never seem to stop eating one! Thank you Vincenzo for teaching me!

My mom taught me when making mashed potatoes to do 1 potato per person and then 1 extra "for the pot" so it sounds like it works the same with the eggs in carbonara :)

My husband used your recipe, and I used it until I became disabled. Putting peas and parsley in it is a disgrace!!!!! We are proud to follow your recipe. The pepper makes it too, not forgetting the Peccorino too. Yum!!!!!😋

We would throw the pasta on the ceiling, usually just spaghetti pasta, to test to see if it's done. Just a fun thing that my mom showed me as a kid. Not that it should be used to determine when it's done, but it's getting kids in the kitchen and teaching them a little about cooking! When I made your carbonara, I was able to get pasta that was actually cheaper than barilla, which is about $3 where I live. It really doesn't hurt the pocket book to get a quality pasta. Sometimes, it's cheaper! And that was the case for me because I paid about $2 for some high quality pasta! I was so proud of myself for the find!

Worked at a diner in sanborn ny while working at village bake shoppe back in the 90s and guy came in for pierogies home made...loved them...stayed up for 2 days making them for the biker and tractor trailer guys...lots of fun

Interestingly when I was a kid in Germany, when we ate "Carbonara" it was always some frozen dish type of thing with cooked ham and peas. Made kids happy, so mom bought it for days when everything was too busy to cook properly.

A bit of topic. Gordon Ramsay and Jamie Oliver both have worked with Italian chefs. Gino D'Acampo with Ramsay and Gennaro Contaldo with Oliver. So they should have no excuse for getting it wrong.

I make carbonara the more traditional way. It should be creamy and rich with the guanciale, egg, and cheese, and I like to grade the pepperoncini over it fresh to add the texture and bite from the pepper to balance out the saltiness and creaminess from the egg/cheese mixture. I don't know why people always want to add the kitchen sink to traditional recipes. I was raised by Sicilian grandparents, and although they never cooked carbonara, the food we did eat was pretty traditional Sicilian food from traditional Sicilian recipes.

His birth name is Ferry but he changed it back to his ancestors name Fieri. That I can appreciate but then make at least make an attempt to live up to that name by staying close to Italian recipes. Then it would make complete sense.

Sup Vince, i remember seeing this, and i know guy, went to school eith his wife lori, he does make it this way, is good tho but even he said adds peas cuz likes them 🤷, his lat name was changed to fieri before married, was grandfathers last name changed from ferry when came to America. The pasta on wall or ceiling ive seen done and some friends born in Italy do it, even ehen making meatballs some throw meatball at ceiling to check consistency 🦧🤷, its crazy crazy🥹, look at thier ceiling has circles from meatballs over time 🤣😂, why i don't know but they do. If he makes a variation to the authentic carbonara recipe, it shouldn't be carbonara. I do a variation of Brazilian and Portuguese Feijoada with, and I used to call it so, but a friend of mine who lived in Brazil told me I was using the wrong kind of meat and I stopped calling it Feijoada.

at 9:15, you need to understand that Mercicans always go nuts about what is the fashion. We've seen olive oil and avocado being the power foods. Chefs put those everywhere, talked about those ingrediants until their faces turned blue. Now peas are the new power food. It is going to pass. “Earned that right.” The right to what? Screw up a traditional dish? How did he “earn” it? Because he’s a big name on Food Network? Because he has endless shows? He’s heavily promoted, who knows why? Mostly because he’s loud and overbearing. It’s hard to escape him. But that doesn’t earn him anything. It’s so American to think that people who are pushy, rich, and always in your face have special status. The only thing he has earned is big money from Food Network.

I have no objection to any chef cooking whatever they want to cook. I do object to them exploiting the names of traditional foods as their recipe name when they're not traditional recipes. This should be called peas and parsley inspired by Carbonara. Guy's personal twist ...

Italian, Mexican, and many other traditional dishes have been Americanized. Think what you want, but its just the way it is. Guy Fieri nor Gordon said its old world traditional recipes.

people can cook these dishes as they wish but using descriptions such as classic and authentic is an absolute misrepresentation. There is something special when the dish is authentic and traditional just as Vincenzo respects.

Peas put natural nitrogen into the soil when they grow while most other crops take a lot of nitrogen from the soil. It’s more natural than dumping chemical fertilizer into the soil. The pea plant is very hardy and can survive tough growing conditions. Peas are very cheap, high in protein and fiber. They’re grown simply for their nitrogen output quite often and are therefore very cheap. Americans had to survive some very hard times during the depression and bought what they could afford. A lot of those depression era meals were passed down and exist today in various forms. I promise you Italians were using hot dogs, government cheese and peas in America and calling it Carbonara during the depression. I can add some cheap calories to a meal, get some protein and fiber all while helping farmers keep their soil more fertile…. The only downside is that some Italians might be offended…. Meh. People aren’t going to say. “This is non authentic Carbonara with peas, bacon and Parmesan.” We would just call it carbonara and assume that your eyes work and can see the bacon and peas for yourself. There are starving people around the world that would love to have that bag of frozen peas and you could call it carbonara, enchiladas, or spam and they’d still be happy to eat it. America is built from the ground up on capitalism. Corporations like stuff that can be mass produced and processed on a conveyor belt with minimal stopping points in the process. Pecorino is $40 for .9 kg. Parmesan is about $10 for .9kg. Likewise guanciale is about 4-5x the price of bacon if you can even find it in the Midwest. We get truck loads of 1 item out here and if you want something that isn’t mass produced it’s going to cost you a lot more. When an American uses the word carbonara to describe a pasta with peas they’re not doing it to insult anyone.
