"Farfalle impazzite" in Italian literally means "butterflies gone wild" and the name comes from the peculiar shape of this type of pasta and (probably) the colorful look.
I have made some research, but the origin of this recipe is not very clear.
It's just one of the thousand recipes that just "exists" in our culture.
What is certain though is that it reminds me of my childhood and in my family is a springtime must.
The flavor of bell peppers combined with mushrooms and cream is just perfect and vegetarians will love it.
Of course, even if the name is farfalle impazzite, any type of pasta goes well with the sauce!
INGREDIENTS (2-3 portions):
10.5 oz FARFALLE PASTA
1 small ONION
1/2 YELLOW BELL PEPPER
1/2 RED BELL PEPPER
EXTRA VIRGIN OLIVE OIL
FRESH PARSLEY (finely chopped)
FRESH CREAM (8.5 oz)
SALT
BLACK PEPPER
INGREDIENTI (2-3 porzioni):
300 gr FARFALLE
1 CIPOLLA piccola
1/2 PEPERONE GIALLO
1/2 PEPERONE ROSSO
OLIO EXTRA VERGINE
PREZZEMOLO TRITATO
PANNA FRESCA (250 ml)
