IMPORTANT: If using fresh whole anchovies, you'll need to FREEZE the anchovies for a week before marinating them. Freeze at -4°F (-21°C) per the FDA recommendations. This process kills the most dangerous parasites that are sometimes found in blue fish like anchovies, which can cause foodborne illness or even death.

fresh anchovies: 30-40 filets
lemon juice: from 2 whole lemons
vinegar: 2 tbsp (white wine vinegar or similar)
fine salt: 1-2 tsp (as needed)
flatleaf Italian parsley: about a handful
fresh thyme: 4 sprigs
fresh marjoram: 2-3 sprigs
ginger (optional): small piece
garlic: 2 cloves
peppercorns (optional): to taste
olive oil: extra virgin
