Spicy Okra & Ivy Gourd Stir-Fry (Mezhukkupuratti) Recipe | Quick and Healthy Indian Veggie Dish

Ingredients:
250 grams Okra, cut into small pieces
250 grams Ivy gourd, cut into small pieces
6 Garlic cloves, crushed
4 Green chillies, slit
1/2 tsp Black pepper, crushed
3 tsp Cooking oil
Curry leaves
Salt, to taste
Step-by-Step Instructions:
1. Prepare the Vegetables:
Cut 250 grams of okra into small pieces.
Cut 250 grams of ivy gourd into small pieces.
2. Heat the Pan:
Heat a pan on medium flame and add 3 teaspoons of cooking oil.
3. Add Aromatics:
Once the oil is hot, add 6 crushed garlic cloves, 4 slit green chillies, and a few curry leaves. Sauté until the garlic turns golden brown and the curry leaves are fragrant.
4. Cook Ivy Gourd:
Add the cut pieces of ivy gourd to the pan. Stir well and cook for about 2 minutes, allowing the ivy gourd to start softening.
5. Add Okra and Season:
Add the cut pieces of okra to the pan. Stir well to mix with the other ingredients. Add salt to taste and continue stirring.
6. Cook the Vegetables:
Cook the mixture, stirring occasionally, until the vegetables are tender and most of the water content has evaporated. This should take around 10-15 minutes. Ensure the vegetables are cooked through but still retain some of their crisp texture.
7. Add Black Pepper:
Once the vegetables are cooked and the water has evaporated, add 1/2 teaspoon of crushed black pepper. Stir well to evenly coat the vegetables with the pepper.
8. Finish and Serve:
Turn off the flame and transfer the curry to a serving dish. Serve hot with rice or as a side dish with your favorite Indian meal.
