Nutmeg pickle
Ingredients
1. Nutmeg made into julians - ½ kg
2. Garlic - 2 bulbs (15 to 20 cloves)
3. Bird’s eye chilli (kanthari) - 15 to 20
4. Chilli powder - 1 ½ to 2 tbsp
5. Fenugreek powder - 1 ½ to 2 tsp
6. Asafoetida powder - 1 ½ to 2 tsp
7. Salt - to taste
8. Sesame oil (approx.) - ¼ to ½ cup
9. Vinegar - ¼ to ½ cup
Preparation
1. Smear 1 tbsp salt on nutmeg julians, keep 10 minutes & fry in hot sesame oil till reddish.
2. Fry garlic in the sesame oil, followed by bird’s eye chilli.
3. Mix the fried items together with the three powders (4, 5 & 6) & stir well.
4. Add the remaining hot oil & heated cooled vinegar, stir.
Bottle. Use after 1 month. Shelf life 1 to 2 years.
