Video from Jaya Kurup*Jackfruit Masala Curry*
Ingredients:
- Raw jackfruit: 250 grams
- Dry coconut: 1 cup, grated
- Red chili powder: 1 tablespoon
- Black pepper: 10 whole
- Garlic cloves: 10
- Garam masala powder: 1 teaspoon
- Turmeric powder: 1/2 teaspoon
- Coriander powder: 1 tablespoon
- Asafoetida: 1 teaspoon
- Oil: 1 tablespoon
- Salt: to taste
- Mustard seeds: 1 teaspoon
- Cumin seeds (jeera): 1 teaspoon
- Curry leaves: a few
- Coriander leaves: a few, chopped
Method:
1. Heat a pan and add onions, dry coconut, garlic, and black pepper. Roast until light brown.
2. Add half of the chili powder, coriander powder, and turmeric powder. Allow the mixture to cool and then grind it to a smooth paste.
3. Clean the jackfruit and cut it into small pieces.
4. Heat oil in a kadahi. When the oil is hot, add mustard seeds and cumin seeds. When they start to splutter, add onions and stir for 2 minutes.
5. Add turmeric powder, the remaining chili powder, and the chopped jackfruit. Mix well.
6. Add 2 cups of water, cover, and cook until the jackfruit is soft.
7. Add the ground masala paste and cook for a few more minutes.
8. Prepare the tadka (tempering) and add it to the curry.
9. Garnish with chopped coriander leaves.
Your jackfruit masala curry is ready to serve.
