In this video we show you how to cook a great dish called Jalapeno Poppers. The Optavia 5&1 Lean and Green Version. This is one of our favorites around the homestead. Especially when we have so many of the items needed for the recipe in our garden, fridge or freezer from past harvest preservation.

Jalapeno Poppers - Optavia 5&1 Lean and Green
Yield: 2 Servings
Per Serving: 1 Leaner, 3 Green & 1.5 Condiments
Ingredients:
Cooking Spray
4oz 95-97% lean ground beef
6 jalapeno peppers cut in half, seeds removed (or more if they are small)
1/2 cup low-fat plain Greek yogurt
3 medium scallions, sliced thin
1 large pepper red, diced fine
1/4 tsp garlic powder
1/4 tsp cumin
1/4 chili powder
1/8 tsp paprika
Directions:
Preheat oven to 350 degree F.
Lightly grease baking sheet, set aside
Cook beef in pan over medium heat until done - set aside - (We like to add the bell pepper and scallions to beef while cooking)
Combine beef, yogurt, cheese, scallions, pepper and spices in a bowl
With a spoon, fill jalapeno halves, (or what what ever type of pepper you want to stuff) with cheese mixture
Place peppers, cut side up on prepared baking sheet. Bake 25 minutes or until golden.
