It was the service for me! Be as pleasant as you can when your serving/selling food! When you said you needed to order and the response! Bland! No pleasantries whatsoever! Rain is as natural as sunshine! That shouldn't make a difference in how you deal with customers! But then again..maybe it's just me!

Yes I agree that food service at some Jamaican eatery could be improved! I have been all over the island to different spots and always try to support the little businesses but find for the most part they act like they are doing you a favor! Just because the food is good does not mean that the service should be poor and acceptable! Ironically, that attitude has also migrated to Florida where you will experience the same in a lot of Jamaican restaurants!

Very poor! For grown people they could have at least made an effort to give some eye contact when speaking to the customers. Definitely not a place that I will be putting on my list. It’s a damn shame.

We stuffed our suckling pigs with a great flavoured traditional stuffing. Our wonderful cook basted it with butter throughout the roasting. In those days food was not as heavily spiced as today, not bland, but the true flavour of the meat shone through. Suckling pig is a delicacy throughout the world. Italy has wonderful versions, with crispy skin, as does Spain.

I really enjoyed each and everyone of your videos I try to watch all of them. With pork you must sees it in a couple of days in advance if you want that white bead to be flavorful and tender. Soai all that has to be done is rub the marinade on inside of pig let it soak in then add the jerk rice then cook the pig , completely different taste !

@Captain Cookbook where was the lie? This is a Jamaican I institution been going on right here in Lambs River for generations! Take the trip you will see it just the way Mark saw it! It wasn’t a rainy day and that pork is simply amazing People are lined up for hours before the pork arrives and it is non stop for these servers until the pork is all gone!! They weren’t standing around picking their nose! So they weren’t ignoring Soai they were serving the people that was ahead of him even if they weren’t videotaped!! Lots of Jamaicans have issues with being videotaped without their permission ! Either way we too quickly to bash our own institutions and people

If the pork is over seasoned it will mek the rice inside seems over salt wen it done bake cause it take hours,best way is to leave the pig in ah large container to marinade for 24 hours in the fridge 12 hours on each side soo the rub you put inside the belly will get into the meat before ingredients is pack inside,seasoned rice & vege etc waiting to see you try tha bro travel safely people
