Every two years, bakers from 25 countries compete in the world's most prestigious international boulangerie competition, "Mondial du Pain".
"The Best of Mondial du Pain", its championship competition, was held in Japan at Makuhari Messe from March 1 to 3, 2023.
From Japan, Chef Shuichi Osawa, the champion of the 7th competition (2019), Haruka Kubota (Com N), and Takaaki Nishikawa (ça marche) as coach participated in the competition and won the overall championship.
Each team consisted of three people. A player (25 years old or older), a young player (assistant. 22 years old or younger), and a coach.
The competition was based on the total points of several categories, including “Daily Bread", "Health and Nutrition Bread", "Viennoiserie", "Decorative Bread" and “Respectus panis".
The competition lasts two days.
The bread must be completed within 10 hours: 1.5 hours on the first day and 8 hours on the second day (plus 30 minutes to finish the decorative bread).
