1. I don't even think I've ever had lotus root before, but something about how it looks just always makes me go: "I want to eat that!". The rolled omelette looks so cute with the okra like little stars, that would also be a great idea for a kid's bento. A ham flower? Cute! 2. Those rice sandwiches are gorgeous! 3. Somehow I imagined/ecpected lotus root to be crunchy. Now I'm just wanting it more. 4. Meals that combine fish and meat are called "Surf and turf" in some countries. Just a fun fact I wanted to share. Another lovely video, thanks!

Seems like you are so interested in lotus root :) Some people told me in comment that there is frozen lotus root at some Asian grocery stores. I don't know how common it is in Japan, but I often make larger batch of food for myself on the weekend and midweek. Meaning I'll make 3-4 days worth of food at a time. I'd love to see some of your ideas for that sort of cooking since I can't always dedicate time to cooking each night. It was also really interesting to see okra outside of the US since that's generally a southern US specialty. Fried okra is a big thing in the southern states and is usually offered in barbeque restaurants.

@@JapaneseCookingChannel You can find it in a lot of Cajun style dishes and many African-American dishes as it was an affordable and familiar vegetable. Also I am guessing that Japanese spinach is stronger in flavor than American spinach because it's harvested later. Most raw spinach in the US is sold as "young spinach" and harvested when the leaves are much smaller than what was in the video.

Love the tip about using vinegar water for soaking. When you add the "salt & pepper" from one container, are you using a certain balance of the two, or are you using Asian salt and pepper mix, with the Szechuan peppercorns? Also, the Japanese spinach is HUGE!!! It looks like chard.

This is an easy to use, well-balanced mixture of salt and pepper :) About the spinach, it must seem so big to people overseas. That's normal size for us 😂 I was so surprised when I first saw the baby spinach in the US. haha I've never known about chard. Do you eat it with salad or something like that?
