Ever crave for that simple salad with the orange colored dressing from Japanese restaurants? Just want to say, look no further! I found the recipe of all recipes for Japanese Carrot Ginger Dressing authored by Nami of Just One Cookbook. She's a Japanese Food Blogger and her recipe is spot on. I really can't recreate it a another way! I wasted a lot of food, time and money trying others and I know for sure, hers is THE BEST!!!
This dressing's color and flavor will put you in a good mood! The zing will wake you up and keep coming back for more.

There are are minor tweaks that I made, but I followed 99% her proportions exactly; I forgot the ground pepper, only had red miso paste and used avocado oil because it has a similar nutrition profile to olive oil.
Japanese Carrot Ginger Dressing Recipe from Just One Cookbook:
Total Servings: 16
Serving size: 2 tablespoons
Ingredients:
1 carrot (4.8 oz, 135 g)
¼ onion (2.5 oz, 70 g)
1 knob ginger (1", 2.5 cm; 0.6 oz, 17 g; preferably young/spring ginger for a milder taste)
1 ½ Tbsp sugar
1 Tbsp miso (Nami uses mild and mellow white miso)
¼ tsp Diamond Crystal kosher salt (use half as much for table salt and two-thirds for sea salt by volume) (to taste)
freshly ground black pepper (to taste)
1 tsp roasted sesame oil
½ cup rice vinegar (unseasoned) (rice vinegar is mild; DO NOT substitute it with other vinegars as they are too acidic and strong)
¼ cup neutral-flavored oil (avocado, rice bran, vegetable, canola, etc.; I used avocado because it has a similar nutrition profile to extra virgin olive oil)
Directions:
1. Wash and peel carrots and ginger
2. Cut carrots, ginger and onion to weigh it out on the scale
NOTE: Weight is super important to maintain consistency in flavor
3. Add veggies to blender
4. Add liquid sesame and avocado oil, vinegar, miso paste, salt, black pepper and sugar to blender
5. Blend to desired texture, I like it a little chunky, so it reminds me of the restaurant experience
6. Pour in a container with a lid for serving and storage.
