How is the iron cladding? I have stainless clad carbon knives and patina of carbon steel is nice, but iron can be much more reactive I saw with a tojiro knife. Is KU finish lasting? Thanks

IS there any specific technique you used to sharpen this knife? I got one recently and it's my first Japanese knife, and the bevel is different from what I'm used to

one year old but from the bevel height I can tell it needs sharpening at a super low angle

Did you get this direct from Moritaka? Did you get the upgraded handles? The ones on the site look awful. How long did that KU finish last? No overgrinds?
