It's called a "slurry" in English: Slurry - a combination of starch (usually cornstarch, flour, potato starch or arrowroot) and cold water which is mixed together and used to thicken a soup or sauce 😊

@@MiwasJapaneseCooking Of course it isn't! Why would English make any sense ever? LOL Actually "slurry" is used in other contexts as well, where something is combined with a liquid. Slurry: a semiliquid mixture, typically of fine particles of manure, cement, or coal suspended in water. *The English language strikes again!* 🤣 Other languages do this so much better. It should be called "liquid starch thickener" or something. Honestly, I think Japanese would be easier to learn than English, despite having to memorize a couple thousand symbols.

I'm definitely going to try hiyashi chuka! And also I'm inspired to make something else with the "egg crepe" as the outside (like a regular crepe), and a filling. Maybe with something spicy to drizzle over like chili crisp? What was the "shio" tofu like? It sounds interesting! (I just learned that word because of watching your videos lol)

Terrific recipies, can't wait to try these. Often have baby spinach, baby kale and arugula on hand so tend to add these to most things I cook as toppers after slicing them in thin strips.

Hi Miwa San! I always buy the pre-packed hiyashi chuuka with the ready sauce on it. I will definitely try your recipe and replace the egg with "tofu scramble"😉

The mung bean or chickpea flour (or soaked in water and blened) with black salt (kala namak) works for omelettes as an egg replacement as well

Ya I agree that this would be good to do with just egg! You could use the liquid just egg the same way she does or, if you can’t be bothered to use a stove you could always use the frozen just egg folded egg!

If you keep every components separately, I would say probably 2 days for noodle after it's cooked but the sauce will last for 5-7days in the fridge^^ Good luck Nicole^^

Ah, I was wondering what the secret was to making those omelettes. My last attempt was scrambled egg. Hiyashi Chuka looks delicious. I will definitely cook this for my family. Thank you, again and really should purchase your cookbook given the recipes feel nutritious and delicious and practical.

Thank you so much for the recipe, Miwa! I had to use different vegetables (zucchini, spinach, and green onion) because I didn't have what you used, but the meal was delicious! My wife immediately wanted to know if there was more. I think we will be making extra to keep in the fridge for later. (Adding chili oil made it even more yummy - great suggestion!) Your instructions were very easy to follow and I always find your videos so charming and earnest.

hiyashi chuka is one of my favourite dishes! I always make it with a tangy soy sauce, though I have also a sesame sauce for cold noodles. I put the ingredients in a jar and shake well. and always have a big jar of it in the refrigerator so I can make it in no time :) And I have discovered that you can make this very thin eggs in the microwave. I always put cucumber on mine, and usually ham because my husband and daughter love it. also I need the egg and lots of beni shoga red pickled ginger. I wonder if my daughter will eat the tomato noodles. She only eat tomato soup, but this is a cold soup. Perhaps I try it in the summer vacation.

Hi Miwa-san..thank you for sharing some delicious noodle recipes for hot summer days. I love hiyashi chuka so much. I also add a little wasabi paste to the dashi to add a little spice and sprinkle some snredded nori. It’s a great recipe where everyone can add whatever toppings they like. It’s become hot here but will only last 4-5 days before some rain ☔️ comes. But nowhere close to 35 degrees that you’re experiencing 🥵 take good care and be careful in the heat!! 😊🇨🇦
