This is a Japanese take on a traditional Salisbury steak. It’s t is simmered in a rich gravy full of Unami flavours. It is wonderful, hope you give it a try.
Ingredients
1 brown onion
1 red pepper
200 grams green beans
400 grams ground beef
200 grams ground pork
Shitake mushrooms, approx 4
3 Roma tomato pureed, approx 200 grams
120 ml whole milk
140 ml red wine
40 grams panko
Black pepper
White pepper
nutmeg
Salt
2 tbsp Worcestershire sauce
4tbsp ketchup
1-2 tsp chicken bouillon
1 tbsp honey
Recipe
1. Slice peppers in strips and cut off ends of green beans.
2. Sauté in olive oil till just browning
3. Add one tbs water and allow to steam for 1 minute
4. Season with salt and pepper and put to the side
4.5. Puree two to three tomatoes(about 1 cup)
5. Mix 400g of beef with 200 g of pork. Mix until it starts to get sticky then put in freezer for 10 minutes
You want to keep the meat very chilled the whole time as you do not want the fat to melt.
6. Soften 40 grams of panko with 120 mls of milk
7. Chop the onion finely.
8. Chop shitake mushrooms finely
9. Add to chilled meat the softened panko , 1/2 the onion and 1/2 the shitake.
10. Add 1/2 tsp of salt and pepper, and 1 tsp of nutmeg
11. Combine and keep mixing until it forms a sticky paste.
12. Chill meat again for 10 mins in freezer.
13. Put into 4 to 6 portions.
14. Slap each portion 10 times into a bowl. This will help create a spongy texture, and will remove airpockets.
15. Cover hands in oil to prevent sticking then Form into oval shaped patties, smoothing surface.
16. Put an indent in middle of patty so it retains shape when cooking.
17. Brown the patties on both sides till you have nice color then remove.
18. Add onions and mushrooms and saute till soft. The juices should help remove any fond created by patties.
19. Add wine , simmer and reduce by half.
20. Add pureed Tomatos, Worcestershire sauce, ketchup, honey, bullion, 1 cup water and simmer for 5 minutes minutes
21. Pop in patties and cook for 6 minutes turning one. There should be enough liquid to almost cover them. Use a pan proportional to the number of patties to ensure this happens. Do not over cook these as they will become tough.
22. When cooked to internal temp of 140 remove or cover with cheese and allow to melt.
Serve in bowl with gravy, Salisbury steaks and garnish with vegetables.
