Payasam is a sweet porridge like dessert served at the end of a vegetarian repast. It helps in a digestion of a meal. Usually it is topped with cashew nuts and raisins which is roasted in ghee which gives a flavor to the payasam. Th main ingredient in my payasam is the sago, moong dal and milk with strands of saffron. Enjoy !!!!
Recipe :-
Ingredients :-
Javvarisi (Sago ) - 1 cup
Pasi Paruppu ( Moong Dal ) - 3/4 cup
Jaggery - 2.5 cups
Water - 1/4 cup
Milk - 1 cup
Saffron - a few strands
Ghee- 1 tbsp.
Cashew nuts - 10
Raisins - 10
Cardamom Powder - 1 /2 tsp
Pinch of salt
Wash and soak the javvarisi (sago for 30 mins.
Dry roast the pasi paruppu (moong dal ) until aroma is released and once it is lightly browned , take it and cool it for some time.
Then wash and cook until soft. Set it aside.
Take 1 cup of milk and add in the saffron a few strands to soak. Set it aside.
Cook the javvarisi (sago) in 2 - 3 cups water until transparent.
Once done add in the cooked pasi paruppu (moong dal) and stir to combine.
Add in the jaggery and stir to mix .
Then the milk with saffron is added in , Add in a pinch of salt to enhance the taste of the jaggery.
Cardamom powder is added in to mix.
Heat ghee in a pan, add in the cashew nuts . Once browned add in the raisins and stir until it bubbles. Pour it in the payasam. Give a quick stir before you turn off the stove. Serve it as a dessert after a vegetarian meal. Enjoy !!!!
