Jerk Chicken tacos with a Pineapple and Mango Salsa
3 Chicken Breasts
4 tbsp Jerk Seasoning wet
0.5 Red Onion
100g Pineapple
100g Mango
100g Cherry Tomatoes
1 Lime
Pinch Salt
Pinch Pepper
9 Mini Flour Tortillas
Wash the chicken in lemon juice and white vinegar and then rinse in clean water and pat dry with a paper towel.
Butterfly the chicken breasts and add to a bowl.
Add in the jerk seasoning and rub all over the chicken.
Place the chicken onto a baking and place under a hot grill for 10-15 minutes. Remove from the grill and pour the juices into a bowl and set aside flip the chicken over and place back under the grill and cook for a further 6-10 minutes.
Remove the chicken from the grill and using two forks shred the chicken and place it into a bowl and cover with foil to keep it warm.
Place a large frying pan or skillet on high heat, then spray with a little oil add a spoonful of the drained juices into the pan, place a tortilla into the pan moving it around the pan to soak up all the juices and allow the tortilla to caramelise. Once caramelised remove and place on a taco rack. And repeat with all the tortillas.
Time to plate, spoon some of the shredded jerk chicken into the tortillas then top with salsa, serve with a side of jerk gravy lick you’re lips and enjoy 😋😋😋 #carribean #carribeanfood #jamaican #jamaicanfood #easyrecipe #jerkchicken #taco
