【家常菜】潮州豆酱焖鱼 Teochew Bean Paste Braised fish - A homecooked special 豆酱煮迪仔鱼
Hey everyone, we are back this week to share a homecooked special recipe that many Teochew Households would know - Braised Fish in Beanpaste or 潮州豆酱焖鱼. I've had this dish from when I was young and this was one of my favourites growing up. It's super simple to make and it's super flavourful, suitable to go with both rice and porridge.
For this recipe, you will need the following ingredients:
1 Leatherjacket
1 yellow onion
1 small ginger
50g carrots
Some spring onions
1.5 tbsp of bean paste - can be commonly found in Asian supermarkets
0.5 tbsp Shaoxing wine
1 tbsp Light Soy Sauce.
Steps:
1. Salt the leatherjacket surface about 10 minutes before frying.
2. Fry ginger strips until they get fragrant.
3. Remove ginger strips and fry the fish until it gets golden brown on both sides.
4. Remove the fish and set aside.
5. Fry the onions until fragrant.
6. Add in the carrots and spring onion whites.
7. Add in the beanpaste and fry until fragrant.
8. Add water once it gets fragrant, and let it reach a boil.
9. Add in the Shaoxine wine and light soy sauce, mix and taste.
10. Add in the prepared fish and let it simmer for 1 minute each side.
11. It should be ready to serve.
