Jiggly taiwan castella recipe
■ Preparation
・ Preheat the oven to 160 ℃

75ml...White sesame oil
105g…Flour
90ml…milk
102g…egg yolk
198g…Egg white
110g…White sugar
① Put white sesame oil in a pan and heat it to around 70℃.
② Add the sifted cake flour and mixed milk until the mixture disappears.
③ Add one egg yolk to the above
④ Whisk the egg whites and when the whole is foamy, add caster sugar in several batches to make meringue.
⑤Take about 1/4 of the meringue and mix it with ③.
⑥ Pour into the mold with the rest of the meringue and put it in a hot water bath on the top plate and steam it.
⑦ After confirming that the fire is in the center with a bamboo skewer, remove it from the mold and it is completed.
