JOSEPHINA COOKIES:
Holiday Recipe Perfect with tea or coffee and it makes a great gift
INGRIDIENTS:
1 cup of sugar
Two eggs
1 cup of vegetable oil
One stick of room temperature butter
1 teaspoon of baking powder
1 teaspoon of vanilla extract
flour as much as it takes to make a cookie dough
18oz of apricot jam
DIRECTIONS:
Separate 1/4 of the dough and set it aside. (Use it on top as it shows in the video.) Transfer 3/4 of the dough on to the pan and spread it evenly. Spread the jam on top. Add 3 table spoon of flour to the dough that you have put aside earlier. Use a grater to grate the dough on top of the jam. Cook it at 350 degree oven until it turns to pail pink. Let it cool completely. Cut to 2X 2" portions and serve. See YouTub video for more detailed information.
