The estimated time I usually ignore. I'm slow at chopping veg, stove temps vary, distractions happen (like someone insisting a box of printer paper must get opened while you're about to finish ingredient prep 😠...it totally could've waited until food was simmering for 40 min...) The food is ready when it's ready. Sometimes it's quicker than anticipated, sometimes you totally misjudge yourself and its much slower than you expect, or a piece of equipment doesn't work and you need plan B (oven vs bbq).

I recently learned the America's Test Kitchen hardboiled egg method that steams the eggs using a steamer basket and I'm OBSESSED- even brand new eggs peel perfectly every time because of the science behind it (putting fridge cold eggs into the hot environment shrinks the membrane away from the inside of the shell). Especially if you're prepping and going to peel them immediately after they come out of ice water bath, as occasionally a shell or two out of batch will crack, but it's so worth it for the lack of headaches. And by only boiling an inch of water it goes soso much faster. Can't recommend it enough, I'll definitely never make devilled eggs with any other method.

I LOVED this video concept! A really honest attempt and review of these “It’s so fast or so easy” recipes and/or chefs online. I do enjoy his recipes; especially the sauces he comes up with but I did see most of his meal prep as just inspiration bc I know there’s no way it’d be that fast or simple. And I’m the daughter of a caterer! I’ve picked up hacks and skills but shake my head at some of the overly ambition claims out there just imaging a novice bitting off more than they can chew and getting discourage. Again love love loved this!

This is impressive and really interesting. I'm a fairly experienced cook and I couldn't have managed to keep all these plates spinning. I also cook 95% of my meals but I make fairly large batches of soup, chili verde, frittatas, casseroles, gumbo, etc that I can freeze and/or reheat so I actually only cook every few days. Good job. 👍

I used to watch Joshua W when he was in that tiny kitchen and used cabinets to film his videos. He made some videos that made me want to try some new cooking adventures. My uncle, retired restaurant chef and now culinary instructor, gifted me his first cookbook when it came out. By that time I had stopped watching his videos but was excited. I immediately went back to his YT channel to see what I should make. While I am happy he is succeeding the video selection no longer inspired me. I have made a few of his recipes from his first book and they are meh, passable for effort and taste. Most of them I will never attempt because they seem fussy for fussy’s sake not for improvement but just to flex. Now with a staff of people behind him and managers, publicist, and media reps, he just seems unapproachable and uninspiring. I am happy that his hard work paid off and he is enjoying success but no longer someone I watch online. I did, however, thoroughly enjoy your video. It seems like the main reasons I stopped watching him were most of your complaints with this 1-hour meal prep concept, er illusion. And slow clap for the actual other roughly 3/4 time it took to accomplish the meal prep (shopping, organization/Mis en place, and clean up). Kudos to you for keeping it real for us working parents just trying to keep all the things afloat.

I haven't watched this yet, but I just have to say I really think it does a disservice to the average person when a chef talks about speedy dishes. I can make this prep in one hour and I can do the 30 minute meal, but those times are legitimately only accessible to me because I am also a chef. It's also misleading with clean up, too as it's almost never factored into the time as well. I consider most of those videos to be a bit clickbaity because of those reasons.

When it comes to shopping, you’re adding that into your meal prepping time? Lol I can shop online at my local Walmart and have it delivered and the shopping probably wouldn’t take me more than maybe five or seven minutes because basically I have everything in my list and I just click it really quick and I can order, a bunch of groceries max out of 10 minutes or less I would not be adding this into your meal prep because you can do this in advance before meal prep therefore should cost you zero time because you’re probably usually in bed while you’re watching TV or doing some other activity! I love Josh’s videos and yes, I don’t think they’re an hour for one meal prep but at the same time you break it down several different days to do those meals meal prepping isn’t that hard and it may be a little time-consuming but is sitting on your phone watching videos or playing games or anything of that nature as well 1:54 2:02 2:07
