Mavinkai or raw mango is a seasonal gift which adds happiness to our summer cooking with its unique tanginess. In this recipe, I have chosen to use Totapuri mavinakayi instead of the other extreme sour raw mango varieties. Not only because Totapuri has mild and balanced tanginess which is better not to trigger acidity, but also for its nutritional profile. It contains a lot of potassium and magnesium, two minerals that aid in blood vessel relaxation, heart health, and reducing blood pressure. It may also reduce levels of triglycerides, free fatty acids, and cholesterol in the blood.It is rich in vitamin B6, Vitamin A and E and iron.
In this recipe, in place of the traditionally used white rice or avalakki/poha made of white rice, I am using jowar flakes. Jowar is one of the best millets for summer. It is also rich in fibre, minerals (calcium, magnesium, sodium, iron) and vitamins (B1, B2, B3, E).
Choose Totapuri raw mango for its milder tanginess and refreshing taste profile.
