In the Turkish language, 'Tabak' meaning is meal or course and in Urdu'Maaz' meaning is 'honorable; So it is very clear that the word Tabak Maaz stands for the food or dish which is prestigious. Tabak Maaz is an easy and delicious Kashmiri Dish.
In this recipe, We cook goat's ribs in spices and grill in clarified butter. So that the upper texture of cooked meat pieces get crispy and increases its flavor. As soon as you taste, you become a fan in a single bite.
So let's get started a unique dish of Kashmiri cuisine, the recipe of Tabak Maaz.
Recipe:
Boil Water approx 1.5 liters, Add peppercorns 8-10 pieces, Cloves 6-7 Pieces, Black cardamom -2 pieces, Green Cardamom 3-4 pieces, Mace one flower, Cinnamon-2 sticks. Salt should be added as per the water quantity. After adding its water should be little salty (1.5 TBLS), Turmeric Powder 1TBLS, Fennel Powder 1 TBLS, Ginger Powder 1 TSP, Ginger garlic paste 1.5 TBLS, Mix well and boil for 5 minutes. Add goat rib pieces. Here I have cut one side goat rib into three parts. Cook these ribs at medium flame for approx 40 minutes. We have to 90% of these ribs. Now take out ribs from pot and add a cup of milk in which we have added a pinch of asafoetida. Now boil this spice stock and milk for approx 5-7 minutes at medium heat. Add ribs again in the pot and cook for 10 minutes at medium flame and further 10 minutes at high flame. Ribs are cooked. Now finally takeout from the pot. Heat up clarified butter approx 2-3 TBLS in a griddle pan. I am using a cast iron heavy pan but you can you the options available. Shallow fry and grill these ribs in clarified butter. Once these get crispy texture, take these out from griddle to avoid burns. The grilling process makes these crispy, juicier and delicious. Serve hot. it the perfect starter to accomplish your evening drink.
