The spices, onions, and ghee are certainly enough on their own to make a flavorful dish, but it's the Chef's hands and heart that put the love in the tummy. :-)

Hey Vander, yes, on that. Oxtails take a good 3-4 hours to get to that meltingly soft stage. Cook them for the first 30 minutes without any water. Then stir, and add 500ml (2 cups) of water. And leave to cook for 2 hours on low, covered. Stir at the 1 hour mark and add more water as necessary, until the oxtails are done. If you have a slow cooker, you'll be able to cook them without too much water. Let me know how it goes.

It can, completely depending on the cook, region and family. If you want to add potatoes, cut them up into cubes, fry lightly to brown, then add to the dish about 30 - 45 minutes before the end of cooking time, depending on the size of the potato cubes.

Hi Azlin, not sure if you saw my question on your blog. Will this work with chicken? I'm keen to try it this weekend. I still want to make this beef version but two friends don't do red meat, so I though I'd make 2 versions.

Hey Cait, just saw your comment on the blog too. While it's not traditionally made with chicken, my answer would be, why not? If I were making it with chicken, I'd go with on the bone pieces for a tastier dish all around.
