Kairi ki Chutney/ Green Mango Chutney
Ingredients
Kairi (raw mangoes) 2 big, cut into 1 inch cubes
Fresh Mint 1 handful
Frssh coriander 2 handfuls
Garlic Cloves 3-4
Green chilies 2-3
Salt to taste
Cumin seeds 1 tsp
Ice cubes 3-4
Water 1/2 cup (or more if needed)
Preparation
In a blender add ice, water, and everything else except kairi chunks.
Blend into amooth paste and then add kairi chunks in batches and keep blending
When the chutney is smooth, transfer to a glass jar and refrigerate up to 2 weeks.
Alternatively, you can freeze the chutney in ice cube tray and use as needed.

Patta Gobhi Rice
Ingredients
Oil 3-4 tbsp
Cumin seeds 1 tsp
Rai (mustard seeds) 1/2 tsp
Bay leaf 1
Onion 1 small, chopped
Green chili 1-2, chopped optional
Ginger paste 1.5 tsp
Garlic paste 1.5 tsp
Patta gobhi (cabbage) chopped, 3 cups
Boiled Rice (made from 1 cup uncooked rice)
Salt to taste
Cumin powder 1 tsp
Black pepper powder ro taste
Garnishing:
Fresh coriander leaves, chopped
Green chilies 3-4
Preparation
Heat oil in a wok and add chopped onion, cumin seeds and rai and cook.
when the onions turn golden, add ginger paste, garlic pate and green chilies. saute until aromatic.
No add chopped cabbage, salt, cumin powder and black pepper powder.
Cover and cook the cabbage on low flame until soft.
Now add boiled rice and stir everything up.
Lastly, add fresh coriander and green chilies.
Give a stir and cabbage rice is ready.
