I strongly recommend avocado oil or grape seed oil on a soapstone. Those have a lot higher smoke point than olive oil. Olive oil contributes to the black goo that can be left behind on the smoke stone. Also something I do is I have a 1” paint scraper that I use to scrape off leftover oil and grease right after the cook. The thinner layer of goo burns off as the grill cools down and makes final clean-up easier.

Kamado Joe sells cast iron grill grates and this is the soapstone. I love be soapstone.

You would be fine using hand basket of large lump charcoal for reverse searing steaks.

It's stain resistant and easy clean up. If you take care of it, it shouldn't crack. I like to put it on top of the grill grate just for extra support. I pre-recorded a few videos but we do have snow in Oklahoma!

Oh yeah that looks my kind of experiment...I would love to have a soap stone for my Kamado wondering if I get similar set using KJ system..definitely need to look into this.

So, from looking at the picture, there is no fire to the left under the deflector? And the soapstone is not on the lowest setting, but on a mid range setting? And the grill grate on the left is on the highest setting? Maybe an explanation on each of these decisions would be helpful for the anal ones like me. Otherwise, a very good video and great looking steaks! I subscribed, thanks!

Thanks Steve for watching and subscribing. Always great feedback on what is helpful to put in the videos. So, i did two zone cooking. I reverse seared the steaks on the top regular grate until 120ish, and had soapstone on lowest setting opposite side with grill grate underneath it to support it. You could set the soapstone on lowest part of divide and conquer without grill grate but like the peace of mind of extra support of stone was what I was going for. I did have heat deflector for extra heat protection when reverse searing steak. Appreciate you watching and hopefully that makes sense.

Thanks! I typically take the steaks to 130! Compound Butter: * unsalted butter * 3 cloves garlic, crushed and finely minced * 1/2 teaspoon Worcestershire sauce * 1/4 teaspoon black pepper * 1/4 teaspoon kosher salt, or to taste * 1 tablespoon finely chopped fresh parsley

You should remove that ceramic deflector. No need as you banked the coals to the opposite side. All that a deflector does is protect food from direct radiant glow heat from the coals.

Thanks for watching. What's great about bbq, is there are a lot of ways to do it. This is how I like to set it up when reverse searing for extra protection and slowly cook it. No doubt, you can do this setup without the deflector with soapstone in place.
