A savory dish with a rich and creamy peanut sauce - this is our version of the Kare-Kare recipe.
In our recipe, I used oxtail and beef tripe. The secret to this dish is to have the meat really tender, so I made sure of it by using a pressure cooker. You can also do a slow cooking process but to save time, use a pressure cooker instead. In addition, I made our own thickening solution for the sauce by grinding glutinous rice into powder form.
This is also a popular dish served during special occasions, which is timely also this holiday season. It has meat, vegetables, all simmered in the peanut sauce. The peanut butter I used is sugar-free that is why I added sugar into this recipe.

Ingredients:
* 550g oxtail
* 250g beef tripe
* 1 bundle pechay
* 1 medium eggplant
* 1 bunch string beans (sitaw)
* 1 medium white onion, chopped
* 5 garlic cloves, minced
* 1 medium red onion (for tenderizing the beef)
* 1/2 cup glutinous rice (malagkit), toasted and grinded
* 1/2 cup peanuts, coarsely grinded
* 3 tsp fish sauce (or more, to taste)
* Annatto water - 1/4 cup annatto seeds soaked in 1/2 cup hot water
* 1 pc banana heart (puso ng saging), sliced
* 3 Tbsp peanut butter ( I used sugar-free but you can use any you prefer)
* 1 tsp sugar
* cooking oil
Procedure:
1. Use a pressure cooker to tenderize the oxtail and beef tripe. Add water and 1 whole red onion. Boil first to remove the scum. Cook for 30 minutes. Remove from the pot and set aside.
Note: The beef broth will be used later in cooking.
2. In a pan, toast glutinous rice for ten minutes. Transfer to a grinder. Grind until it becomes a fine powder. This will be used for thickening the sauce.
3. In a bowl - make annatto water by combining annatto seeds soaked in hot water. Let it cool. Use a strainer to remove the seeds.
4. In a preheated pot with oil, add glutinous rice powder. Mix.
5. Sauté white onions and garlic.
6. Pour the beef broth. Add the annatto water. Let it boil.
7. Put the oxtail and beef tripe. Add the peanut butter. Mix. Cover and simmer.
8. Add the banana heart. Put sugar and fish sauce. Stir and simmer.
9. Add more glutinous rice powder to thicken the sauce. Add the peanuts. Mix then simmer.
10. Add the string beans. Simmer
11. Add the eggplants. Simmer.
12. Lastly add the pechay. Simmer for a minute then turn off the heat.
13. Serve in a bowl. Enjoy with steamed rice!
