Karniyarik (Turkish Style Stuffed Eggplants) is easy to make and absolutely delicious! In my opinion, the eggplants taste better when they are fried in plenty of oil, but depending on your preference, you can brush them lightly with oil and cook them in the oven or air fryer until soft.
Since the eggplants are salted to drain them, you can use less salt for the filling.

🔸 3 eggplants
For the minced meat filling:
🔸 2 tomatoes
🔸 1 clove of garlic
🔸 1 onion
🔸 2 mild long peppers
🔸 1 - 2 tbsp tomato paste
🔸 ½ lb minced meat
🔸 Salt & pepper to taste
🔸 1 - 2 tbsp chopped parsley
🔸 1 tsp paprika powder
🔸 Allspice to taste (optional)
For the sauce:
🔸 2 - 3 tbsp olive oil
🔸 1 - 2 tbsp tomato paste
🔸 250 ml of water or broth
🔸 Salt and pepper to taste
Aside from that:
🔸 1 tomato
🔸 1 mild long pepper
