Kashi halwa is a popular Indian sweet dish, especially in South India! It's made from grated ash gourd (also known as winter melon or white pumpkin) cooked with sugar, ghee (clarified butter), and spices. The dish gets its name from the city of Kashi (Varanasi), where it originated.
Here's a simple recipe for Kashi halwa:
🥣Ingredients:
- 1/4th large ash gourd, peeled and grated( 4 cups)
- 1 cup sugar
- 1/2 cup ghee or less than that
- 1/2 teaspoon cardamom powder
- 10 cashew nuts
🥣Instructions-
- Cut ash gourd and discard the skin and the inner pulp. Rinse well if needed.
- Grate 4 cups of ash gourd
- Cook the grated ash gourd until it's soft and the water has evaporated.
- Add 1 cup of sugar and mix until the sugar has dissolved.
- Boil for 5 minutes until the sugar syrup thickens.
- Add 1/4 cup +1tbsp of ghee and mix until the ghee starts to release from the sides.
Note: Add ghee little at a time.
- Adjust quantity of ghee as per your taste.
- Once the mixture releases the pan add cardamom powder and mix well.
- Fry 10 cashews in a teaspoon of ghee until they turn golden brown.
- Pour the fried cashews over the halwa and mix well.
- Serve warm or cold.
