Wondering how to make delicious Kashmiri Tabak Maaz (Mutton or Lamb Ribs) at home? Well now you can. Tabak Maaz is made from lamb/mutton ribs cooked on low flame in lots of ghee which gives it a unique crispiness from outside and at the same time is juicy from inside. Tabak Maaz serves as a popular appetizer of the Kashmiri Cuisine Wazwan.
Try our authentic recipe to make Tabak Maaz at home and enjoy it the same way you've enjoyed by having a wazwan.
Ingredients:
1. Lamb or Mutton Ribs - 4 pcs
2. Salt - 2 tbsp or as per taste (2 tsp for cleaning rib and 1 tbsp for stock)
3. Turmeric Powder - 1/2 tbsp
4. Green Cardamom - 6
5. Cinnamon Sticks - 2
6. Cloves - 6
7. Black Cardamom - 2
8. Ginger Garlic Paste - 1 tbsp
9. Ghee - 1/2 Cup
10. Water
Method:
1. Take enough water in a pan and add 1 tbsp salt to it. Add ribs and boil for 10 mins.
2. Strain the ribs and remove any scum etc and wash under cold water
3. Take 6 -7 cups of water in another vessel and add Salt (2 tbsp), Turmeric Powder, Green & Black Cardamom, Cloves, Ginger Garlic Paste, to it.
4. Bring the water to a boil and then add ribs. Let the ribs cook on medium flame for about 45 min or until ribs are tender.
5. After that take out the rib from the stock.
6. Heat ghee in a separate pan and then on a LOW (Simmer) flame fry the ribs until these turn brown and crispy from both sides. (Fry each side for about 10 to 15 mins)
7. Tabak Maaz is ready. Serve Hot!
