What you will need:
Sugar: 1/4th cup
Basmati rice: 1/4 cup
Kesar/ Saffron: 1 pinch
Milk: 2 glasses
Elaichi/ Cardamom powder: 1 tsp
Pistachio/ Pista: 1/2 cup
How to prepare: :
• To prepare kesar pista phirini you will need ¾ cup of sugar, ¼ cup of basmati rice, 2 glasses of milk. A pinch of saffron or kesar, 3-4 elaichi, some pistas.
• I will first soak the basmati rice in water for about 1/2 hour.
• I will now soak the pistas in water so that the peel gets easily removed.
• Removing the peel helps in getting the green coloured pista which simply looks great and also tastes good.
• Now my next task is to soak a pinch of saffron in luke warm milk which I will use later on while preparing the phirni.
• I will now grind the basmati rice coarsely. Please don’t make a fine paste, this is very important.
• Take a pan and add 2 glasses of milk and reduce it a bit. This took me about 10 to 15 mins, now I will add the saffron milk and boil for some time.
• Keep stirring while reducing the milk so that it doesn’t burn at the bottom of the pan.
• Now add the rice and cook till it becomes soft.
• It took me about 10 to 15 minutes to cook the rice.
• Its time to add sugar and cook the phirni till it reaches the right consistency.
• Add 1 tsp of elaichi powder and mix well. I will switch off the gas and add the chopped pistas. I have kept some pistas for decoration .
• I am serving phirni in kullar, as it looks great.
• Keep phirni in the refrigerator for 2/3 hrs and let it set. It tastes best when served chilled.
